Spiced Strawberry Fizz

Pink drink

My 12-year-old came up with this recipe! He was motivated because we had no sodastream syrup in the house. It's basically a fruity sugar syrup. It's very easy to adapt this recipe based on what you have on hand. Use any fresh, tinned or frozen fruit (e.g. blueberries, blackberries) and mix up the spices to make any flavour you want.

3 cups of frozen strawberries
2 star anise
1 cup sugar
Zest of 1 orange
Juice of 1 orange
1 cinnamon clove
3 cups water

Put all ingredients into a small saucepan on a medium-high heat and bring to a gentle boil.
Stir until the sugar is dissolved then lower the heat and simmer for 10 minutes until the mixture has thickened slightly.
Allow to cool.
Quarter fill your glass with the fruit syrup then top up with fizzy water.
