Cucumber Citrus Mocktail

OMG this is absolutely delicious! I made this when hosting some girlfriends the other night and it was insanely popular. It’ll probably be my Christmas Day mocktail. I use bottled lemon and lime juice to make it easy, and if you don’t have a juicer you can blitz cucumber chunks in a blender and then strain the liquid.

Ingredients (for 3-4 drinks):
1 cup cucumber juice + thin slices for garnish
1 tbsp chopped dill
1 tbsp honey
1/4 cup lime juice
1/4 cup lemon juice
1/4 cup water
Fizzy water

In a cocktail shaker or a large jar with a tight-fitting lid, muddle the chopped dill, honey, lemon and lime juices and water until the honey has dissolved.
Add the cucumber juice and some ice.
Cover and shake well.
Strain into fancy glasses and top with fizzy water.
Garnish with a thin slice of cucumber.
