Coconut Ginger Soda

I’ve had some coconut sugar sitting at the back of my pantry for ages and haven’t really known what to do with it … until I saw this recipe on Pinterest! You could substitute for another dark sugar (like muscovado or brown sugar). You can also reduce the sugar content greatly if you are trying to be good!

Ingredients:

80g fresh ginger
1 cup coconut sugar
1 cup water
Sparkling water

Method:

* Peel the ginger and cut into rounds
* Put the ginger, coconut sugar, and water into a small saucepan over a medium heat
* Bring to a low boil and reduce heat to low
* Allow mixture to reduce for approx 1 hour (but watch that it does’t turn to caramel!)
* Allow to cool
* Mix a quarter of a cup of this sugar mixture with sparkling water and ice cubes, garnish with a slice of lemon if desired
