September 27th, 2019 Drink of the Week 1 comment
This drink is easy to make but feels really treaty. It’s basically a cordial which you can keep in the fridge and mix small amounts with soda water as you wish.
Combine lemon juice, water, honey and blueberries in a small saucepan.
Bring to a gentle boil over a medium heat then turn to low and simmer for 5 minutes.
Cool.
Strain through a sieve and store in the fridge.
When ready to drink fill a glass with ice, add 1/3 cup cordial then top up with fizzy water.
Enjoy!
Whether this time of year fills you with cheer or fear, setting personal boundaries can be a powerful form of self-care to safeguard your mental health and wellbeing.
