Watermelon Cooler

Pink watermelon drink in a champaign flute surrounded by candles

Just three ingredients in this delicious drink. The coconut water gives it a delightfully tropical edge. So simple but really yummy!

Ingredients:

2 cups watermelon flesh
1/2 cup coconut water
3 cups sparkling water

Method:

Blitz the watermelon and coconut water together until smooth. Strain it through a sieve into a container.
Refrigerate until ready.

For each drink pour 2(ish) inches of the watermelon slush into a champagne flute then top up with sparkling water.

Enjoy!

    This sounds delicious. I have been thinking over the last week how much booze has started to take over my life with buying 2 boxes of margarita glasses, tequila, Cointreau and white rum for other cocktails. My 20 year old son is being influenced by me….I thought, what a waste of money and brain cells…but maybe… I have this delicious looking drink in the margarita glass at Christmas instead of the boozy margarita. And my husband and son have the alcohol if they want to….so much to think about…I am reading ‘Mrs D goes Without’ at present and the bit about alcohol suppressing emotion has blown my mind. It frightens me quite alot…but I am also curious what a me feeling emotions more keenly will be like….gosh…I know this was supposed to be a comment like, that drink looks yummy but I just needed to blather on…..I did 6 days of not drinking last week and then went nuts and bought a bottle of wine ..now I am on my 2nd alcohol free day…feel calmer now and have told my sister and son…that feels good…
