Creamy Coffee Mocktail

I always love an opportunity to get the cocktail shaker out! Even though this drink is creamy it’s not overwhelming because of the coconut milk. I used decaf coffee (because that’s how I role nowadays) but you could go crazy and use the ‘real’ thing if that is your desire!

Ingredients (for two drinks):

1/2 cup strong brewed coffee, chilled
2 cups coconut milk
1 tsp vanilla essence
2 tsp runny honey or maple syrup
4-6 ice cubes

Method:

Mix all ingredients (bar three ice cubes) in a cocktail shaker or jar and shake well
Pour into a tumbler over the remaining 3 ice cubes

Enjoy!
