Sweet Honey Mocktail

This is a really beautiful drink – delicately flavoured and light. Perfect for an evening mocktail when everyone else is drinking wine and you feel like something yummy but not too sweet.

Ingredients:

1/2 tbsp honey
1 1/2 tbsp boiling water
1 tbsp lemon juice
1/4 cup apple juice
Fizzy water
Ice cubes
Lemon slice

Method:

Melt the honey in a small bowl with the boiling water
Add the lemon and apple juice
Put your ice cubes into a tall glass
Add the honey/apple/lemon mixture
Top up with fizzy water
Finish with a slice of lemon
