The first step in making this drink is to brew a ‘simple syrup’ (sometimes known as ‘sugar syrup’) but the difference here is that there is hardly any sugar! So the drink when finished doesn’t taste sweet at all – just a tiny bit. I really enjoyed it.
4 cups water
3-4 large bushy sprigs of fresh rosemary
2 tbsp brown sugar
5-10 caraway seeds (optional)
Fresh mandarins
Water (fizzy or still)
Ice
First make your rosemary syrup by putting the water, brown sugar, rosemary and caraway seeds (if using) into a saucepan on a medium/low heat
Simmer until reduced by half (this could take 30-40 mins, don’t rush, this is where the flavour comes in!)
Once the syrup has reduced, strain and leave to cool
To make each drink put 1/4 cup syrup into a glass and squeeze in some fresh mandarin juice. Also run the mandarin around the rim of the glass.
Top up with still or fizzy water
Add ice and a slice of mandarin
Enjoy!
