Rhubarb Sparkles

This delicious recipe is perfect for when you feel like making something special and sparkly. Yum!

Ingredients:

2-3 stalks of rhubarb
1 cup sugar (or less to taste)
1 cup water
1 vanilla pod (or 1 tsp vanilla essence)
Soda water
Strawberries, ice, & fresh mint to garnish

To make the syrup:

Slice open the vanilla pod and scrape out the seeds.
Place vanilla pod & seeds into a small saucepan along with the water and sugar.
Poach together until the rhubarb is very soft.
Leave to cool.
Remove rhubarb and set aside to scoff with ice cream later!

To make each mocktail:

Mix approx 1/4 cup syrup with soda water in a wine glass or flute
