I got this recipe from a cute 80s mocktail book my sister-in-law gave me. Apparently this is a well-known soft drink in the Irish County of Meath. I actually really like it! It’s lemony refreshing with a nice earthy flavour from the parsley.

Ingredients:

Juice of 2-3 lemons
Four sprigs of parsley
2 tsp sugar
3-4 ice cubes
Sparkling water

Method:

Put the lemon juice, parsley, sugar and ice cubes into a blender or nutra-bullet thingy and blitz until the parsley has been pulverised
Pour into a tall glass filled with more ice cubes, and top up with sparkling water
Stir and serve
