Pineapple, Orange & Mint Chiller

This is the second drink I’ve made with frozen pineapple (the first is here) and it’s delicious! The flavour of the mint really comes through. I have to give credit to Dr Libby for this drink idea – it comes from her ‘Sweet Food Story’ book.

Ingredients (for one serve):
1 cup frozen pineapple chunks
A handful of mint leaves
Juice of one orange
Fizzy water

Method:

Combine pineapple, mint & OJ in a blender or food processor and blitz. I needed to add a splash of fizzy water to get it going. Pour into a glass and top up with a little more fizzy water. Garnish with a slice of orange and sprig of fresh mint.
