March 1st, 2018 Drink of the Week
This is a little fiddly to make but worth the effort! Makes plenty – enough for many drinks – and would keep for a few days in the fridge.
Ingredients:
* 1/2 cup fresh lemon juice (approx 2 lemons)
* 3 1/2 cups of water
* 2 dessert spoons of honey (or to taste)
* 2 cups of peeled & diced honeydew melon
* Ice
Method:
* First pour the lemon juice into a large jug
* Then put 1/2 a cup of warm water into a small bowl and stir the honey through to melt it
* Pour honey water into a blender and top up with the remaining 3 cups of water
* Tip in the melon and blend until smooth
* Press the liquid through a fine sieve into the jug (I used a spoon to push it through)
* Serve over ice
