Ginger Beer

This is a really lovely way to make authentic ginger beer. It takes a bit of effort but it’s totally worth it! Very delicious.

Ingredients:

Big piece of fresh ginger
3 lemons
4 tbsp demerara sugar (or muscavado, brown or raw sugar)
Fizzy water
Ice cubes
Fresh mint

Method:

Grate the ginger (skin on) into a bowl
Add the peel from 2 lemons and the sugar
Muddle together (pressing down with a spoon or pestle)
Add the juice from 3 lemons and 1 litre fizzy water
Leave to rest then strain through a sieve
Combine with more fizzy water, ice cubes & mint to serve
