Blueberry & Honey Sparkling Lemonade

This drink is easy to make but feels really treaty. It’s basically a cordial which you can keep in the fridge and mix small amounts with soda water as you wish.

Ingredients:

1 cup fresh lemon juice
1 1/2 cups water
1/4 cup honey
2 cups fresh or frozen blueberries

Method:

Combine lemon juice, water, honey and blueberries in a small saucepan.

Bring to a gentle boil over a medium heat then turn to low and simmer for 5 minutes.

Cool.

Strain through a sieve and store in the fridge.

When ready to drink fill a glass with ice, add 1/3 cup cordial then top up with fizzy water.
