Peach and Honey Cordial

August 27th, 2020 Drink of the Week

drink and flowers

This is so fun to make and delicious! I got the recipe from Eleanor Ozich’s ‘My Petite Kitchen’ cookbook.

2 tins of 400g peaches in clear fruit juice – strained
1/2 cup honey
Juice of 2 lemons
2 cups water

Put all ingredients in a saucepan over a medium-high heat and bring to the boil
Reduce the heat to low and simmer for 45 minutes
Strain through a muslin (cheesecloth) or very fine mesh sieve.. pushing the peaches through to end up with a thin but slightly pulpy liquid
Pour into a bottle or jar to store
To serve mix one part cordial with three parts sparkling water

Enjoy this concoction warm straight off the stove or leave it to cool and pour it over ice with a bit of fizzy water added on top.
