Peach and Honey Cordial

This is so fun to make and delicious! I got the recipe from Eleanor Ozich’s ‘My Petite Kitchen’ cookbook.

Ingredients:

2 tins of 400g peaches in clear fruit juice – strained
1/2 cup honey
Juice of 2 lemons
2 cups water

Method:

Put all ingredients in a saucepan over a medium-high heat and bring to the boil
Reduce the heat to low and simmer for 45 minutes
Strain through a muslin (cheesecloth) or very fine mesh sieve.. pushing the peaches through to end up with a thin but slightly pulpy liquid
Pour into a bottle or jar to store
To serve mix one part cordial with three parts sparkling water

Enjoy!
