I was sent this recipe for fresh squeezed lemonade made with coconut water and lavender simple syrup by the good folks at Ranch Creek Recovery. They describe this drink as tropical, herbal, sweet and satisfying and recommend it for hot sun lounging days. Gorgeous and refreshing!
First make a Simple Lavender Syrup
Ingredients:
1 cup water
1 cup white sugar
1 tablespoon fresh lavender blossoms
Directions:
Combine water, sugar, and lavender blossoms in a small saucepan. Bring to a boil, stirring until sugar dissolves.
Simmer for 1 minute.
Remove from heat and let syrup steep (about 30 minutes).
Pour syrup into a sterilized glass jar through a mesh strainer to remove blossoms.
Let cool.
Then make your Lemonade
Ingredients:
1 1/2 cups fresh squeezed lemon juice (from about 9 lemons)
1 3/4 cups sugar
8 cups coconut water
4 cups water
1/4 cup Simple Lavender Syrup
Directions:
Place lemon juice, sugar, coconut water, and water into a large jug and stir vigorously until all the sugar is dissolved.
Pour 1/4 cup of the Lavender Syrup into the jug and stir. You can add more or less lavender syrup to your personal taste.
Enjoy!
