I was in the mood for warm & soothing drinks this week. Probably because the weather is freezing cold in my city. I made both of these infusions twice. The first time I drank them both warm (delish), the second time I left them to cool and then mixed them with soda water & ice cubes to make a mocktail (yummo!). Another option would be to stir through a little honey if you’d like them sweetened a little. You can use the same base ingredients for more than one infusion.

Infusion One: Cardamom, cinnamon & ginger
Pour approx 300ml of boiling water into your mug or glass and leave it for a couple of minutes. Add;
* 1-2 cardamon pods
* 1 cinnamon stick
* Small piece (1/2 a thumb sized) fresh ginger peeled & thinly sliced
Leave to infuse for at least 10 minutes before drinking.

Infusion Two: Lemongrass, ginger & kaffir lime
Boil the jug and pour approx 300ml of boiling water into your mug or glass. Add;
* 2 stalks lemongrass (tough outer layers removed & crushed/bruised with the back of a knife)
* 2-3 torn/twisted kaffir lime leaves (alternatively use 2-3 large pieces of peeled lime or lemon zest)
* Small piece (1/2 a thumb sized) fresh ginger peeled & thinly sliced
Leave to infuse for at least 10 minutes before drinking.

    Hey these look great, since I am on the other side of the world, it’s summer here and I do these with cold water. Faves are ginger and rosemary, basil and lime with cucumber.
    Recently bought some new herbs will post some more when i try them out.
