Indian Chai Tea

Milky chai tea in retro tea cup

This authentic chai tea recipe comes from my lovely workmate Ash, who sometimes suprisingly delivers a mug of it to my desk while I'm working - legend! I highly recommend going to the effort of making the spice mixture and then brewing up a cup of this delicious tea. It's ok to leave out the lemongrass if you don't have it.

To make the spice mixture:

Combine equal quantities of finely ground cinnamon, white pepper, black pepper, nutmeg & cardomom.

Ingredients (for 2 cups of tea):

½ tsp spice mixture
2 cups water
1/4 tsp freshly grated ginger (or 1 tsp dried ginger)
1 tsp dried lemongrass
2 tsp black tea leaves (or 1 black tea bag)
1 tsp sugar (or to taste)
½ cup milk 

Method:

Put the spice mixture, water, ginger, lemongrass and tea leaves into a pot and bring to a simmer.
Simmer for 5 minutes
Add milk & sugar to your liking (darker tea is stronger, lighter is more milky)
Bring to heat again for at least 1 min then strain into your favourite mug.

    Yum looks great! Is the spice mix what is shown on the saucer?

      I doubt it. In the photo, I can see cloves too which is not mentioned in the recipe. Regardless, you definitely want to add cloves too in the mix; it makes a lot of difference. Also, swap ground cinnamon to sticks, there will be lesser residues when straining (I think).
